This pumpkin pie smoothie bowl is a delicious treat, but of course we always try to keep our recipes as nutrient-dense as possible, so you can confidently know that this bowl is filled with vitamins, minerals, protein and healthy fats. The best breakfasts are the ones that fuel you and satisfy you while also providing you with the nutrition you need to take on your day, and this bowl fills all those requirements. Let’s get to it!
For the smoothie bowl base, you will need:
- 2 frozen bananas
- 4 cubes frozen pumpkin puree*
- 2 chia pudding ice cubes**
- 1 spoonful pecan butter
- 1 pinch pumpkin pie spice
- 1 teaspoon vanilla
- ¼ cup coconut milk
* To make pumpkin puree ice cubes, simply fill a standard ice cube tray with canned pumpkin puree and freeze. You can pop them out and add them to smoothies or baked goods (once defrosted) whenever you need pumpkin! For this bowl, we keep them frozen solid when throwing them in the blender to ensure the smoothie is the optimal texture and temperature–– as cold and thick as possible!
** To make chia pudding ice cubes, first we need to make chia pudding! The perfect recipe, we have found, is the combination of one entire can of full-fat coconut milk and approximately five tablespoons of chia seeds.
